You have to have lived under a rock if you aren't familiar with Ayesha Curry . Yes, she is the wife of Stephen Curry, NBA player and also the mom of Riley and Ryan. She's also one of my friend girls in my head. I finally got my hands on a copy of her cookbook, The Seasoned Life---finally. I decided to make one of her recipes as a brunch treat to myself and just play pretend as if we were cooking together in my kitchen with mimosas.
While flipping the pages I found a tempting and beautiful prosciutto egg cup with asparagus recipe. I love egg cups and asparagus just so happens to be one of my favorite vegetables. I thought I would give it a try. I don't eat pork so I X'ed the proscuitto. I said a wish and a prayer that it wouldn't really make a difference.
THIS....WAS...SOOOOOOOOOO.....GOOD! The Gruyere cheese and heavy whipping cream is definitely the secret to the egg cups. I've made egg cups before but never thought to use whipping cream. It makes them richer in flavor. The pairing of warm asparagus and tomatoes...OMG! I would absolutely make this over and over again. It is a dish that I think would be a crowd pleaser at a "friend girls brunch" or just a Saturday morning when you want to treat yourself to brunch at home.
Curry's The Seasoned Life Cookbook is full of easy yet elegant recipes that live up to "eating well". She loves family and her cookbook is a reflection of it with recipes the entire family can enjoy. I love the food photography--that is what sells me.
