Please ask me why I have lived in my house since February of 2016 and haven't taken the time to explore the lovely fragrance as I walk on my porch every single day? Low and behold a recent sniff into the bushes did I discover I have a gorgeous rosemary bush right at my doorsteps. As long as it took me to make the discovery, it didn't take it as long to cook an amazing dinner with an herb I simply adore in restaurants. Here's a quick yet satisfying and gratifying recipe to try...LEMON ROSEMARY BAKED SALMON.
WHAT YOU'LL NEED ....
+2 salmon fillets, bones & skin removed
+ 1 lemon, sliced thin
+4 sprigs of fresh rosemary
+salt and pepper
+ olive oil
1. Preheat oven to 400 degrees F.
2. Rinse rosemary and arrange half the lemon slices in a single layer on a baking dish. Layer with 2 sprigs of rosemary and top with season salmon fillets.
3. Layer with remaining rosemary sprigs and top with remaining lemon slices. Drizzle with olive oil.
4. Bake for 20-25 minutes in the preheated oven. You will know it's ready when the fish easily flakes with a fork.
This lemon and rosemary salmon is perfect with fresh vegetables or rice and a green salad and a glass of savory pinot noir. It's the perfect date night in dinner or a cute "play pretend fancy dinner" with your children. Hope you enjoy!
